Curd Rice - How-to?

Curd Rice
Prep time: 10 Minutes | Cook time: 30 Minutes | Total time: 40 Minutes
Serve: 2 (Servings) | Calories per serving: 327 | Fat per serving: 17.2 g

Ingredients:
1. For paste:
Curd: 1 Cup
Oil: 1 tbsp
Cumin Seeds: 1/2 tbsp
Chana Dal: 1/2 tbsp
Urad Dal: 1/2 tbsp
Curry Leaves: 4 to 6 in number
Green Chillies: 2
Ground Nut: A Few

2. Main dish:
Cooked Rice: 2 Cups
Salt: To Taste
3. Garnish:
Coriander Leaves: 8 to 10 in Number (Finely Chopped)

Instructions:
1. Add 2 cups of cooked rice in a bowl, 1 cup of curd, salt to taste and smash it well. Keep it aside.

2. Heat up the pan well. Add 1 tbsp. of oil and allow it to heat well. Add mustard seeds, after it splatters, add cumin seeds fry it for a minute.

3. Add Ground Nut, Chana dal, Urad dal one by one, fry till it becomes golden brown colour.

4. Add green chillies and curry leaves fry it for a minute. Add the mixture to the curd rice and mix it well.

Garnish with Coriander Leaves. Serve it hot in bowl.

#Tips:
#1: Use Thadka Pan to fry to save the GAS.
#2: I am using cumin seeds as it will help for digestion.
#3: Chana Dal and Ground Nut are optional.
#4: This goes well with pickles. I will soon post a guide.
#5: Ground Nut takes time to cook, while urad dal takes less time than chana dal and ground nut. So fry it wisely.
#6: This dish is a quick dish and very good for health. Usually, this is made of left over rice, since I did this for the kids, I used freshly cooked rice.
